to get Ulquiorra:
Successfully complete Arcade mode with Ichimaru Gin to unlock Ulquiorra

to get Grimmjow Jaggerjack
Successfully complete Arcade mode with Aizen Sousuke to unlock Grimmjow Jaggerjack.

If you collect 84 of the Crests hidden around Hogwarts, you unlock Two Player Dueling Pack 5, which contains Hermione and Ginny.
